Chutney

Chutney add taste to the dish. Have a recipe of chutney and add some color to the meal

Raw Mango and Mint Sauce

Ingredients:

  • Garlic 2-3 cloves
  • Green chilies 6-8
  • Raw mango 2-3
  • Chaat masala to taste
  • Cumin seeds Roasted & crushed ½ teaspoon
  • Salt ½ teaspoon or to taste
  • Mint leaves 1 Cup
  • Water as required
  • Oil 2 teaspoon

Preparations:

  1. In blender, add garlic, green chilies, raw mango, chaat masala, cumin seeds, salt, mint leaves and water, blend until well combined.
  2. Add oil and mix.
  3. It can be stored up to 2 weeks in refrigerator.

Sweet and Sour Sauce

Ingredients:

  • Water 2 Cups
  • Tamarind ½ Cup
  • Jaggery ½ Cup
  • Black pepper crushed ½ teaspoon
  • Salt ¼ teaspoon or to taste
  • Red chili powder 1 teaspoon or to taste
  • Cumin seeds crushed ½ teaspoon
  • Fennel seeds crushed ½ teaspoon
  • Sugar 3-4 tablespoon
  • Black salt 1 teaspoon
  • Cinnamon stick 1
  • Cloves 2
  • Ginger grated ½ inch

Preparations:

  1. In sauce pan, add water, tamarind, jaggery, black pepper crushed, salt, red chili powder, cumin seeds, fennel seeds, sugar, black salt, cinnamon stick, cloves and mix well, cover and cook until sauce thickens (20-25 minutes) and keep stirring in between.
  2. Add ginger, mix and simmer for 2-3 minutes, strain and let it cool.
  3. It can be stored up to 1-2 months in refrigerator.

Spicy Tomato Sauce

Ingredients:

  • Tomatoes 3-4
  • Whole red chilies 6-8
  • Oil 3-4 tablespoon
  • Mustard seeds 1 teaspoon
  • Garlic paste 1 teaspoon
  • Cumin seeds Roasted & crushed ½ tablespoon
  • Red chili powder 1 teaspoon
  • Salt ½ teaspoon or to taste

Preparations:

  1. Roast tomatoes on flame and peel them.
  2. In blender, add whole red chilies and roasted tomatoes, grind until pureed.
  3. In wok, add oil, mustard seeds, garlic paste, cumin seeds and fry for 1 minute.
  4. Add tomato puree and mix well.
  5. Add red chili powder, salt and cook until oil separates, let it cool.
  6. It can be stored up to 1 week in refrigerator.
