Lentils (daal)

Enjoy the traditional Indian food. Daal with rice

Zeera Rice

Ingredients: 

  • Oil 4 tablespoon
  • Bay leaves 2-3
  • Cinnamon stick 2
  • Cloves 5-6
  • Green cardamom 4-5
  • Cumin seeds 1 tablespoon 
  • Rice 2 Cups soaked for 30 minutes
  • Water 4-5 Cups
  • Salt 1 teaspoon

Preparations:

  1. In pot, add oil, bay leaves, cinnamon sticks, cloves, green cardamom, cumin seeds and mix well.
  2. Add rice and mix well, add water, salt and mix, bring it to boil, cook until water is reduced.
  3. Cover and steam cook for 8-10 minutes.

Khatti (Sour) Daal

Ingredients:

Daal: 

  • Split yellow lentil ½ Cup (soaked for 1 hour)
  • Split orange lentil ½ Cup (soaked for 1 hour)
  • Water 1 litre
  • Turmeric powder 1 teaspoon
  • Red chili powder 1 & ½ teaspoon
  • Salt 1 teaspoon
  • Cinnamon stick 1
  • Ginger garlic paste 1 tablespoon
  • Tamarind pulp 2 tablespoon
  • Tomato chopped 1
  • Fresh coriander 2-3 tablespoon
  • Green chilies chopped 1-2

Tadka:

  • Oil ¼ Cup
  • Garlic cloves 3
  • Whole red chilies 4-5
  • Cumin seeds ½ teaspoon
  • Curry leaves 7-8

Preparations:

Daal:

  1. In pot, add split yellow lentil, split orange lentil, water, turmeric powder, red chili powder, salt, cinnamon stick, ginger garlic paste and mix well, bring it to boil, cover and cook until tender lentils are done (25-30 minutes).
  2. Mash lentils with masher, add tamarind pulp, tomato and mix well, cover and cook until tomato are soft (8-10 minutes).
  3. Add fresh coriander and green chilies, mix well.

For Tadka:

  1. In small frying pan, add oil, garlic, whole red chilies and mix well.
  2. Add cumin seeds, curry leaves and fry until light brown.
  3. Add tadka on daal and serve.

Fried Green Chilies

Ingredients:

  • Tamarind pulp ½ Cup
  • Cumin seeds roasted & crushed ¼ Cup
  • Coriander seeds roasted & crushed ¼ Cup
  • Red chili crushed ½ teaspoon
  • Salt ½ teaspoon
  • Green chilies 8 large
  • Oil ¼ Cup
  • Lemon juice 1-2 tablespoon

Preparations: 

  1. In bowl, add tamarind pulp, cumin seeds, coriander seeds, red chili crushed, salt and mix well.
  2. Wash and pat dry green chilies, slits green chilies from center and fill the green chilies with prepared spice mix.
  3. In frying pan, add oil and stuffed green chilies, cover and fry from both sides until done.
  4. In the end, squeeze lemon juice and serve.
