Homemade Tandori Tikke Masala

Ingredients: 

  • Green cardamom 10-12
  • Black cardamom 2
  • Cinnamon sticks 3-4
  • Cloves 6-7
  • Coriander seeds 2 & ½ tablespoons
  • Cumin seeds 1 & ½ tablespoons
  • Mace 1 piece
  • Star anise 1
  • Dried ginger 2 pieces
  • Black peppercorns 12-13
  • Salt 1 & ½ tablespoons or to taste
  • Turmeric powder 1 teaspoon
  • Red chili powder 1 tablespoons
  • Kashmiri red chili powder 1 tablespoon
  • Citric acid ½ teaspoon
  • Yellow food color ½ teaspoon

Preparation: 

  1. In frying pan, add green cardamom, black cardamom, cinnamon sticks, cloves and dry roast for 30 seconds.
  2. Add coriander seeds, cumin seeds and dry roast until fragrant.
  3. Let it cool down.
  4. In spice mixer, add roasted spices, mace, star anise, dried ginger, black peppercorns and grind to make a fine powder.
  5. Add salt, turmeric powder, red chili powder, Kashmiri red chili powder, citric acid, yellow food color and grind again.
  6. Strain with the help of the strainer.
  7. Can be stored in air tight container for up to 6 months (yields 90 gms for 2 kg tikka).
