Parda Pulao



  • Ghee 1/4 Cup
  • Cloves 3-4
  • Cinnamon sticks 2
  • Green cardamom 3
  • Black peppercorns 10-11
  • Cumin seeds 1 teaspoon
  • Bay leaves 2
  • Onion sliced 1 medium
  • Mutton mix meat ½ kg
  • Ginger garlic paste 1 tablespoon
  • Green chilies paste 1 tablespoon
  • Fennel seeds powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Salt 1 teaspoon or to taste
  • Water 3 Cups or as required
  • Rice basmati 2 Cups (soaked)
  • Ghee 3-4 tablespoons
  • Onion sliced 1 medium
  • Green chilies paste 1 tablespoon
  • Yogurt whisked 3 tablespoons
  • Cashew nuts paste 2 tablespoons
  • Almonds paste 2 tablespoons
  • Garam masala powder ½ teaspoon
  • Salt 1 teaspoon or to taste
  • Lemon juice ½ tablespoon
  • Water 1/4 Cup or as required


  • Instant yeast 1 & ½ teaspoons
  • Sugar 2 & ½ teaspoons
  • Lukewarm water ½ Cup
  • All-purpose flour sifted 3 Cups
  • Salt 1 & ½ teaspoons
  • Cooking oil 1 tsp
  • Onion fried
  • Milk
  • Black sesame seeds


  1. In pot, add ghee and let it melt.
  2. Add cloves, cinnamon sticks, green cardamom, black peppercorns, cumin seeds, bay leaves and mix.
  3. Add onion and fry until light golden.
  4. Add mutton mix meat and mix well until changes color.
  5. Add ginger garlic paste and mix well.
  6. Add green chilies, fennel seeds powder, coriander powder, salt and mix well for 2 minutes.
  7. Add water, mix well and bring it to boil, cover and cook on low flame for 1 hour or until meat is tender.
  8. Take out cooked meat in a bowl and set aside.
  9. In pot, add rice, mix well and bring it to boil, cook until water is reduced.
  10. Cover and cook on low flame until 3/4th done and set aside.
  11. In wok, add ghee and let it melt.
  12. Add onion and fry until golden brown.
  13. Add green chilies, yogurt and mix well.
  14. Add cashew nuts paste, almond paste and mix well.
  15. Add garam masala powder, salt, lemon juice, mix well and cook for 2-3 minutes.
  16. Now add cooked meat and mix well.
  17. Add water, mix well and cook on high flame until oil separates and set aside.
  18. In bowl, add instant yeast, sugar, lukewarm water and mix well, let it rest for 10 minutes.
  19. Add all-purpose flour and salt, mix well and knead until dough is formed.
  20. Grease dough with oil, cover and let it rest for 50 minutes.
  21. Add cooking oil and knead dough again.
  22. Sprinkle flour and roll out with the help of rolling pin (18×18 inches) and fold.
  23. In bowl, place folded dough and spread evenly.
  24. Add cooked rice, cooked meat, fried onion, cooked rice and spread evenly.
  25. Add fried onion and fold the edges to close and grease with oil then flip on baking tray (10×10 inches).
  26. Apply milk on dough with the help of the brush and sprinkle black sesame seeds.
  27. Bake in preheated oven at 180 ºC for 10-15 minutes.
